SWISS teams up with Zürich’s Baur au Lac for Taste of Switzerland

SWISS has introduced an exclusive culinary collaboration with the celebrated two Michelin-starred Pavillon restaurant at Zürich’s legendary Baur au Lac hotel, offering a refined "SWISS Taste of Switzerland" experience featuring the Canton of Zürich’s gastronomic heritage. 

Starting this September, SWISS Business Class and First Class guests on intercontinental departures from Zürich are treated to tailored menus curated by acclaimed chef Laurent Eperon. Eperon, renowned for his inventive take on contemporary French cuisine, has been at the culinary helm of Baur au Lac for over a quarter of a century, with long-standing support from sous-chef Maximilian Müller.

These meticulously crafted menus highlight Pavillon’s sophisticated, seasonal approach to classic haute cuisine, available on board through the end of November. 

Business Class travelers can savor appetizers such as a Mediterranean-inspired octopus terrine or a vibrant pumpkin salad, followed by main courses featuring tender beef filet or delicate pikeperch. A curated selection of Zürich’s artisanal cheeses precedes desserts like apricot dacquoise with almond and lemon verbena Chantilly, complemented by a signature array of Swiss chocolates.

First Class passengers are welcomed with Pavillon’s signature Bouillabaisse, enriched with pulled cod and mussels infused with dill oil. Additional starters include poached lobster tail or a seasonal Waldorf salad. Main course highlights include venison entrecôte, John Dory fillet with smoked sturgeon beurre blanc, and roasted cauliflower in a fragrant curry sauce. The meal continues with a premium cheese tasting, before culminating in desserts such as golden lavender honey mousse with salted almonds and fior di latte gelato, or a decadent chocolate-chestnut gateau with poached pear and Turicum gin ice cream.

Established in 1844, Baur au Lac remains an icon of Swiss hospitality, gracefully situated at the edge of Lake Zürich in the city’s bustling center. The property, a member of The Leading Hotels of the World, has undergone recent restorations to ensure its timeless elegance and modern comfort for discerning travelers. 

The "SWISS Taste of Switzerland" initiative, honored with multiple industry accolades, continues to set the benchmark for in-flight gastronomy by partnering with Switzerland’s most esteemed chefs and restaurants from each of the 26 Cantons, rotating menus every quarter for over two decades.
