SWISS teams up with Zürich’s Baur au Lac for Taste of Switzerland

Swiss has unveiled its limited-time partnership with the two Michelin-starred Pavillon - at Zürich’s iconic Baur au Lac hotel - to bring the “SWISS Taste of Switzerland” from the Canton of Zürich. 

From September, Business Class, and First Class customers on long-haul flights from Zürich will enjoy bespoke menus from Michelin-starred chef Laurent Eperon. The celebrated chef has been creating incomparable new French cuisine at the Baur au Lac hotel for over 25 years – assisted for many of those years by sous-chef de cuisine Maximilian Müller.

Signature dishes will showcase Pavillon’s seasonal and modern interpretations of classic haute cuisine in the premium menus until the end of November. 

The Business Class menu includes starters of Mediterranean octopus terrine or pumpkin salad, while the main course features beef tenderloin or pikeperch fillet. A Zürich cheese selection follows before the dessert course of apricot dacquoise cake with almonds and lemon verbena Chantilly and a selection of Swiss chocolates.

Delicious Swiss desserts

In First Class, the menu includes Pavillon’s signature starter dish of Bouillabaisse with pulled cod and mussels in dill oil. Other options include lobster tail or an autumnal Waldorf salad. Exquisite main courses include venison entrecôte, a John Dory fillet with smoked sturgeon beurre blanc, and roasted cauliflower with curry sauce. Zürich’s finest cheeses will follow before the meal concludes with sweet delicacies of golden lavender honey mousse with salted almonds and fior di latte ice cream or chocolate and chestnut cake with poached pear and Turicum gin ice cream.

Baur au Lac is a luxurious grand hotel dating back to 1844. Perched on the edge of Lake Zürich in the vibrant heart of the city, the carefully maintained heritage building is one of the world’s most iconic hotels.
