SWISS launches a new flight menu in collaboration with a Michelin-starred chef

SWISS presents new culinary experiences onboard in First and Business Class in collaboration with the chef Alexandra Müller - focuses on local, regional specialities from the Canton Fribourg.
 
The Swiss airline presented its latest culinary creations under its popular programme «SWISS Taste of Switzerland». The new in-flight menu will be available for six months, starting from the beginning of December.
 
This time, SWISS has chosen to cooperate with the Michelin-starred head chef Alexandra Müller of «Romantik Hôtel L'Etoile» in Charmey. The meals are inspired by modern French cuisine and emphasise on local, regional specialities from the Canton of Fribourg, a rural canton in western Switzerland.

The new culinary program is exclusive offered to passengers in First and Business Class on SWISS long-haul flights.
 
For First-Class travellers, Alexandra Müller has created a selection of starters and main courses that include leek with egg yolk cream and truffle vinaigrette—followed by venison with a Cuchaule crust and Botzi pears (which is a well-known delicacy in the canton Fribourg).
 
For dessert, travellers can choose between a white or dark chocolate Toblerone-mousse with Berton biscuit crumble or meringues from the local bakery «Angélo Rime». In addition, other popular specialities from the Fribourg region are available, including saucisson du Vully and moitié-moitié fondue.

Business Class travellers can expect a starter of beef entrecôte tataki with beetroot-pear salad and Gruyère blue cheese. The main course is a braised beef brisket with demi-glace and sweet potato purée. For dessert, travellers can enjoy a yuzu lemon meringue pie with Fribourg's famous Gruyère double cream.

For all cheese lovers out there - the meals are rounded off with some regional speciality cheeses produced by small local cheesemakers, with delights such as a 15-month maturation Gruyère Vieux AOP, Vacheron Fribourgeois Vieux AOP or Bleu de la Gruyère.
