These exclusive in-flight offerings celebrate authentic Cantonese cuisine and regional Chinese flavors, seamlessly blending heritage with contemporary refinement. The elevated menus are reserved for Business Class and First Class travelers on select long-haul routes departing from Hong Kong.
Business Class:
Business Class guests are treated to a thoughtfully curated gastronomic experience. The journey begins with a signature Sichuan-style poached chicken starter—often referred to as "mouthwatering chicken"—where juicy chicken is enveloped in a rich sesame and chili oil dressing, delivering a harmonious balance of spice, fragrance, and umami.
Main courses are crafted to showcase both tradition and innovation. Highlights include tender pork ribs glazed in a tangy hawthorn and green apple reduction, where the natural sweetness of hawthorn berries is elevated by a touch of apple cider vinegar. For those craving heartier fare, the slow-braised beef ribs with a port wine and tomato sauce offer melt-in-your-mouth richness, complemented by crisp celery and carrots for contrast and depth.
First Class:
First Class travelers embark on a culinary voyage beginning with an elegant crystal pork terrine, inspired by the celebrated Zhenjiang style from Jiangsu province. This dish features delicately pressed pork knuckle, served thinly sliced and finished with a piquant drizzle of aged Chinese black vinegar for an exquisite interplay of textures and flavors.
The main course selection is equally impressive. The sautéed abalone and chicken with Sichuan pepper and vibrant greens pays tribute to classic Chiu Chow cuisine. Succulent abalone and tender chicken are quickly sautéed with aromatic Sichuan peppercorns, premium soy, and fish sauce, accompanied by steamed winter melon rolls and a fragrant salted fish and vegetable rice. Alternatively, guests may opt for the steamed cod fillets paired with Chinese ham and shiitake mushrooms—a luxurious composition marrying buttery cod, savory ham, and earthy mushrooms for a multi-layered tasting experience.
