Cathay Pacific serves Cantonese fine-dining to its premium passengers

Hong Kong's flag carrier - Cathay Pacific - has partnered with the one Michelin star Hong Kong institution - Duddell's - to bring a menu that is sure to excite premium passengers.

For the next 12 months, lucky passengers in Business Class and First Class flying from Hong Kong on long haul flights - excluding Dubai and Tel Aviv - will enjoy Cantonese fine dining at 35,000 feet!

The menu is built on flavours and ingredients that represent the city’s heritage, diversity and ingenuity: from main courses like wok-fried lobster seasoned with ginger, or premium Iberico pork belly simmered in a sweet, sticky soy sauce glaze; to chrysanthemum and longan jelly for dessert. 

Vivian Lo, Cathay Pacific’s General Manager Customer Experience and Design:  “We will be bringing more authentic Hong Kong flavours to our travellers, from those looking for a taste of home to those with adventures in their hearts.” 

Duddell’s Cantonese cuisine is unquestionably Hong Kong-inspired. It says that it wants to “create and bring Hong Kong’s traditional flavours, with easy access, to different parts of the world.”

Iberico pork belly

Passengers in First Class will be able to enjoy a selection of appetisers including chilled abalone (edible sea snail) and cucumber with black vinegar or minced pork with mixed vegetables and pomelo. Main courses include red braised Iberico pork belly with radish or wok-fried lobster in white pepper sauce with spring onions and ginger. Desserts on offer include chrysanthemum and longan jelly with a delicate, floral aroma of chrysanthemum flowers.

Wash your meal down with a glass of fine Champagne

And in Business Class, passengers can feast on steamed halibut with cordyceps flowers, aged mandarin peel and preserved black olives. Barramundi fillets with pickled mustard greens in hot and sour rice noodle soup is available throughout the flight as a light meal or snack. Desserts in Business Class include ginger milk pudding that draws from the Cantonese dessert of ginger milk curd or strawberry yoghurt pudding that takes its cue from the sweet, tart Beijing-style yoghurt.

Passengers flying in First Class and Business Class are able to pre-book their choices.
