Brussels Airlines collaborates with two Michelin-starred chef Michaël Vrijmoed

Beginning October 1st, Brussels Airlines enhances its Business Class long-haul experience by introducing an exclusive menu curated by acclaimed two Michelin-starred chef Michaël Vrijmoed. Renowned for his inventive vegetable-forward cuisine at Restaurant Vrijmoed in Ghent, Chef Vrijmoed joins a distinguished circle of Belgian culinary talents who have redefined the airline’s in-flight dining since 2013. This year, the spotlight shines on innovative Belgian vegetable dishes, reinforcing Brussels Airlines’ commitment to showcasing Belgium’s gastronomic excellence at 35,000 feet.

Since the program’s inception with Michelin-starred chef Geert Van Hecke, Brussels Airlines has consistently partnered with celebrated chefs to deliver refined Belgian cuisine on its intercontinental routes. In 2025, Chef Vrijmoed leads the culinary direction, designing seasonal three-course menus refreshed quarterly, each celebrating local, sustainable ingredients. As with previous years, renowned Belgian wine authority Jan De Clercq and award-winning beer sommelier Sofie Vanrafelghem expertly curate a selection of regional wines and craft brews to complement the inflight dining experience.

Vegetable-Centric Fine Dining at Altitude: Chef Vrijmoed’s menus reflect his restaurant’s famed dedication to vegetables. Business Class guests can choose between thoughtfully crafted meat, fish, and vegetarian options for both starters and mains, all inspired by the freshest Belgian produce of the season.

Appetisers include the chef’s celebrated beetroot creation, delicately balanced with Doyenné du Comice pear, mustard seeds, and a horseradish emulsion. For mains, the vegetarian highlight is roasted celeriac paired with field-grown chicory and crispy Jerusalem artichoke. Those preferring fish or meat can savor options such as pheasant or eel in a signature green sauce, accompanied by a medley of complementary garnishes. Dessert features either an artisanal cheese selection from East Flanders—showcasing Belgian Wittekop and Biloete—or a decadent hazelnut chocolate torte with vanilla-coffee coulis.
