Airline food is not often associated with fine dining, however, Singapore Airlines is teaming up with Gate Gourmet, the supplier of the majority of airline food, to change that. They have invited four top Danish restaurants to create dishes and a menu that will be served to both economy and business class passengers on its Copenhagen-Singapore route from January 2016.
The four restaurants have been informed that studies show that sound can block our ability to taste sweet and sour, while salty tastes can be reduced by up to 15 percent. Umami is the only taste that is immune to aircraft noise, which could be why so many opt for a Bloody Mary in the air. The task of creating flight meals at gourmet level just got even more challenging, not to mention the fact that the food must be cooked several hours before departure. However, four top Danish restaurants have accepted the challenge and will send recipes and menus to a panel of representatives from Singapore Airlines and Gate Gourmet for evaluation.
Tim Lee, head of Singapore Airlines in Scandinavia and Finland,
said: “The ambition is for the quality and taste to soar way up where the passengers can hear the angels sing, and to do so in collaboration with the Nordic and Asian kitchen. We are really looking forward to four of the nation’s best restaurants and chefs taking part and giving us their two cents on what our guests’ taste buds should encounter aboard Singapore Airlines from Copenhagen.”
