SWISS has introduced gourmet cuisine from Canton Geneva to its First and Business Class passengers on long-haul flights originating from Switzerland.
These culinary offerings are a new addition to SWISS's ongoing 'Taste of Switzerland' inflight dining program and are crafted by Olivier Jean, Executive Chef at Geneva's The Woodward hotel. Premium Economy passengers aren't left out—they can savour a three-course meal highlighting Geneva's regional flavours.
Olivier Jean, who leads the culinary team at The Woodward, has developed the menu inspired by his work at the Michelin-starred L’Atelier Robuchon restaurant. There, he combines French haute cuisine with Asian nuances and local ingredients.
For Business Class passengers, the menu features dishes such as poached char in lemongrass sauce, accompanied by sesame sushi rice, sugar snap peas, and roasted squash.
First Class guests can expect delicacies including miso-marinated pike-perch served with port wine sauce, oven-baked polenta, shallot confit, and pak choi.
Premium Economy travellers flying from Switzerland have the option of a three-course meal that showcases Geneva's regional cuisine, including a main course of Geneva-style chicken served with spätzli and green beans.
Since December 2002, SWISS has been offering its First, Business, and Premium Economy passengers on long-haul flights a culinary tour through Switzerland's diverse regions. Every quarter, a new Michelin-starred chef is invited to curate a menu focusing on seasonal and regional specialties. The meals are also complemented by regional wines and cheeses. Over its 20-year history, the ‘SWISS Taste of Switzerland’ program has featured 81 guest chefs, each representing one of Switzerland’s 26 cantons.
Business Class Champagne:
Jacquart Mosaïque Brut Jacquart – Champagne Chardonnay, Pinot Noir, Pinot Meunier Made by the young and modern champagne house, Jaquart is an award-winning Champagne. Composed of various grapes from different terroirs including Côte des Blancs and Montagne de Reims, a truly mosaic offering. This balanced blend allows an aromatic and elegant power. A lush, generous and creamy champagne, with aromas of pear, apricots and white blossom. The finish is characterised by a very fruity palate and a twist of lemon zest.
First Class Champagne:
Laurent-Perrier Grand Siècle Laurent-Perrier – Tours-sur-Marne, Champagne, France Chardonnay, Pinot Noir The Grand Siècle is a prestigious Champagne cuvée from LaurentPerrier, crafted exclusively from Pinot Noir and Chardonnay grapes, according to three enduring principles. First, the Champagne must be blended from a selection of three exceptional, complementary years. Second, it must be Chardonnay-dominant with a supplement of Pinot Noir from 11 of the 17 existing Grands Crus. Third, it must be cellar aged for 10 years. The result is a Champagne with a beautiful, golden-yellow tint and intense depth of flavour, with subtle aromas of brioche, honey, hazelnut and toasted almonds.
